THE STORY

Panja is a 100% gluten-free bakery that opened in January 2023 in the heart of Tirana bringing tasty artisanal gluten-free diaries in a country where there is lack of these products. Nowadays, it is the first and only gluten and lactose-free bakery in the capital and Albania. All their products are made and cooked on site with almond milk, quinoa flour, almond flour by expert bakers under the guide of the chef Anila and after consulting with the nutritionist Marsela. From the sweets to breads and different dairy products everything at Panja is healthy but also very, very tasty.

THE COLLECTION

Even though everything at Panja is gluten and lactose-free -from cookies to bread- none of it feels like a compromise. The bakery’s selection includes a range of gourmet cakes -like the Devil’s Food, Leopard and Charlotte cakes-, muffins, cookies and other delights. The range of breads on offer includes fava, lupini, chickpeas, buckwheat and quinoa bread. Products change daily depending on chefs inspirations. At Panja you can also find other unique and excellent products perfect for your lactose free diet, like almond butter, almond cheese, almond yoghurt and almond milk.
